Nandi finds a new whey

Friesland Foods has struck a deal with Nandi Proteins to use Nandi's patented technology to create a new breed of whey protein concentrates that also serve as fat replacers.

Nandi boss David McCartney said: "Using these proteins, a product with 0-1% fat tastes like it has 3% fat. They work in everything from healthy low fat protein-enriched milkshakes and ice creams to cooked hams (as a water binder)."

The technology, which involves heating proteins in the presence of sugars in order to denature them, can be applied to all major proteins including soy and egg. Under the deal with Nandi, Friesland will focus on dairy products while Nandi will focus on non-dairy applications.
