Innovation in probiotics
Probiotics will continue their journey from dairy into a wider range of products - from salad dressings and ice cream to cereals with chocolate - in the next 12 months, according to Lal'Food, the functional food business unit of French ingredients giant Lallemand.
Technical development manager Anne-Laure Clair said: "Following our partnership with Barry Callebaut [to use chocolate as a carrier for probiotics], we've been working with several food companies and a UK cereals firm about products with chocolate pieces and yoghurt coatings containing our probiotics.
"We're also talking to a leading manufacturer about incorporating probiotics into ice cream itself at the maturation stage."
